Curry Confetti Lentils

Happy New Year. 2018 was such a long and busy year, would not bore you with details.

Do you have any nutritional and fitness goals for 2019? For me, it is eating more plant-based foods, and fish for protein. I am doing better with gym classes, and that gladdens my heart :).

This recipe is a quickie literally. It was prepared in under 30 minutes, and tasted fantastic. I used a new seasoning from Tjmaxx (do you like shopping for seasonings at TjMaxx?), Paellero.  Also got Dried Shallots and Fire Roasted Onions.

The Paellero gave this dish a vibrant yellow undertone and a subtle lemony background flavor. I enjoyed the lentils with fried plantains.

Ingredients
  • 1 cup red lentils (rinsed)
  • 2 cups vegetable stock
  • 2 tablespoonfuls of canola oil
  • 1 sachet of the TjMaxx seasoning.
  • 2 teaspoonfuls curry
  • 2 teaspoonfuls thyme
  • 1 tablespoonful dried shallots
  • 1 teaspoon roasted onions
  • 1 teaspoon smoked paprika
  • 1 small red bell pepper (chopped)
  • 1 small green bell pepper (chopped)
  • ½ of a sweet onion (chopped)
  • 1 teaspoon black pepper
Instructions
  1. Add all BUT the bell peppers into a nonstick pot.
  2. Cook on medium heat for about 12 minutes.
  3. Stir and taste for salt. Add salt if needed.
  4. Add peppers, and cook for 12 more minutes.
  5. Lentils should be mushy by now, else cook for 5 more minutes.
  6. Turn off heat and serve.
