Smoked Rice Pilaf

The smoky flavor of this rice is everything!! Rice pilaf is one of those dishes that never disappoint when you have guests over, for a quick lunch, dinner or just because.

I love the vibrant yellow color, the smokiness, the veggies, and medley of spices. Try it, your mouth and belly will thank you.

The best thing about this dish is that it is a one pot wonder! Prep,  dump in pot, wait…. polish your nails as you wait… and then enjoy with veggies, plantain, and grilled chicken!

Smoked Rice Pilaf

Ingredients
  • 3 cups of parboiled long grain rice
  • 3 cups of water ( to cook the rice. You need more to wash the rice)
  • 3 cups of frozen mixed veggies (carrots, corn, peas, string beans)
  • 1 tbsp smoked sea salt
  • 2 stock cubes
  • 2 tsp curry powder
  • 2 tsp thyme
  • 2 tsp Ms. Dash
  • 2 tsp rosemary
  • 2 tsp mixed herbs
  • ½ medium red onion chopped
  • ¼ cup canola oil
Instructions
  1. Wash the rice thoroughly until the liquid runs clear.
  2. Add all ingredients except the veggies and onion.
  3. Cook (with pot covered) on medium heat for about 15 mins or until most of the water is dried up.
  4. Add veggies and onions.
  5. Stir properly until veggies are evenly distributed.
  6. Cover pot and cook on low heat for additional 10-15mins or until veggies are cooked .
  7. Turn off heat, leave to cool and enjoy with a protein.
