Sunday Dinner

Happy Palm Sunday, to you and yours. Today i was privileged to spend time with someone special (SS) and needed to enjoy every moment of it. This of course meant spending as little time as possible in the kitchen but still dishing out something delicious and memorable. Rice was out of the question because we eat rice every sunday. Tonight had to be extra special.

I had some unsweetened shredded coconut, arugula,  caracara oranges, beans and fresh salmon. For us that translated to Coconut MoinMoin, Arugula Salad and Oven Roasted Salmon.

Did you just lick your lips? LOL caught you! 🙂

The Coconut MoinMoin was made using the same recipe here but i substituted 3 cups of fresh coconut milk in place of water. The coconut milk was simply made with boiling water and shredded coconut.

The coconut milk affected the texture of the MoinMoin, not necessarily the taste. It still had all the bean flavor but was almost spongy to me.  It felt like luxury in my mouth. SS did not notice the presence of coconut milk.

The Salmon was the easiest. Some Oil, Ms. Dash, Salt other miscellaneous herbs in the pantry, and heat from the oven, the Salmon was ready in about 10mins.

Dessert, was CocoOat Robobo made with residue from the coconut milk.

Ingredients:

  1. 1 cup moistened drained shredded coconut
  2. 1/3 cup brown sugar
  3. 1 egg
  4. 1/4 cup oatmeal

Method:

  1. Mix all together, roll into balls, bake for about 15 minutes.
  2. Leave to cool and enjoy!

SS was pleased, and thought dinner was delicious. 🙂 Moments like this make cooking even more rewarding :).
