Shrimp + Chard Hot Slaw

This quickie was the perfect one to host hungry friends after the 3hr service in church ushering in the new year.

Chard is earthy, healthful and delicious. Shrimps are pretty to look at, and are full of protein.  Protein + Greens are a great combo to ring in a healthy new year!  Best part of it all is that it took less than 15mins to prepare.

Shrimp and Chard Hot Slaw

Ingredients
  • A bunch of fresh swiss chard (washed and chopped)
  • A small red onion (sliced)
  • 2 tbsp PalmOil
  • 7 large jumbo shrimps (shelled and deveined)
  • 1 tsp salt
  • 1 tsp hot pepper
  • 1 tsp ginger
  • 1 tsp thyme
  • 1 tsp curry
Instructions
  1. Heat the oil in a pan for about 1 minute
  2. Add the onions and cook for about 5 mins while stirring
  3. Add all of the spices, stir and continue to cook
  4. Add the swiss chard and shrimps.
  5. Stir and cook for about 3 minutes or until shrimps turn whitish pink.
  6. Turn off heat.
  7. Enjoy

I enjoyed it with boiled yam. You can enjoy Shrimp + Chard slaw  with rice, sweet potatoes, and boiled plantains.
