Overnight Spicy Harissa Chicken

Happy Sunday! This chicken is SPICY, simple and sexy.  It adorns rice perfectly. There is not much to say except: make it and relish in its goodness.

We had it with our Sunday rice. A step away from stew sometimes does not hurt. 🙂

Ingredients
  • 2 medium sized skinless boneless chicken breasts cut into bite sizes
  • 1 red bell pepper - chopped
  • 1 orange bell pepper - chopped
  • 1 medium sized red onion - chopped
  • 1 tbsp freshly squeezed lime juice
  • 1 tsp freshly squeezed lemon juice
  • 1 tbsp Harissa
  • 1 tsp salt
  • 1 tbsp ground pepper
  • 3 tbsp canola oil
  • 1 tsp ginger
  • 1 tsp garlic
  • 1 bunch scallions (chopped)
Instructions
  1. Add all ingredients (except scallions) in a bowl, combine well and leave to rest overnight in the fridge.
  2. Heat dutch oven until sizzling hot.
  3. Add the overnight Harissa chicken mix into the pan and spread out to cook evenly.
  4. Stir after about 3 minutes. The peppers and chicken should have a slight char.
  5. Continue to stir at 3 minute intervals.
  6. Chicken should be cooked through in about 10 minutes.
  7. Turn off heat and finish with chopped scallions.
  8. Enjoy with rice
