Carb Free Surf &Turf Sandwich
- 1 large chicken breasts
- 3 large Shrimps (cleaned, shelled and deveined)
- 2 tbsp melted butter (KerryGold is fantastic!)
- 1 tbsp thyme
- 1 tsp cayenne pepper
- 3 tsp garlic
- 1 tbsp dill weed
- 1 tsp Ms. Dash
- 1 large chicken breast (slice vertically into two as you will slice a hotdog bun)
- 3 slices of cucumber
- some baby spinach
- Mix all spices into the butter to create a rub.
- Heat up a grill pan until sizzling.
- Rub the "rub" all over the chicken.
- Place chicken on a grill and cook on medium heat for about 10 minutes (cover with foil while cooking).
- Flip over and cook for 10 more minutes.
- Cook shrimps on grill for about 2 mins or until pink.
- Check for doneness.
- Leave to cool
- To Assemble:
- Place cucumber, spinach and shrimps in the chicken.
- Fold chicken over as you will fold a hot dog bun.
- You may fill with Mayo, mustard, or Sriracha.
- Enjoy!
