Carb Free Surf and Turf Sandwich

Ingredients
  • 1 large chicken breasts
  • 3 large Shrimps (cleaned, shelled and deveined)
  • 2 tbsp melted butter (KerryGold is fantastic!)
  • 1 tbsp thyme
  • 1 tsp cayenne pepper
  • 3 tsp garlic
  • 1 tbsp dill weed
  • 1 tsp Ms. Dash
  • 1 large chicken breast (slice vertically into two as you will slice a hotdog bun)
  • 3 slices of cucumber
  • some baby spinach
Instructions
  1. Mix all spices into the butter to create a rub.
  2. Heat up a grill pan until sizzling.
  3. Rub the "rub" all over the chicken.
  4. Place chicken on a grill and cook on medium heat for about 10 minutes (cover with foil while cooking).
  5. Flip over and cook for 10 more minutes.
  6. Cook shrimps on grill for about 2 mins or until pink.
  7. Check for doneness.
  8. Leave to cool
  9. To Assemble:
  10. Place cucumber, spinach and shrimps in the chicken.
  11. Fold chicken over as you will fold a hot dog bun.
  12. You may fill with Mayo, mustard, or Sriracha.
  13. Enjoy!
