  • 1 medium sized Fresh Blue Fish (about 8lbs)
  • 1 handful fresh rosemary
  • 1 handful fresh tarragon
  • 1 handful fresh japanese basil
  • 1 handful chives
  • 1 scotch bonnet pepper
  • 1 sweet lemon
  • ¼ cup oil
  • ½ tbsp salt

Instructions
  1. Scale and clean the fish thoroughly.
  2. Cut the fish into steaks.
  3. Cut the lemon in half and squeeze juice into a blender
  4. Add fresh herbs, pepper, an oil into a blender and blend until a smooth paste is formed.
  5. Arrange fish in a baking sheet.
  6. Sprinkle salt all over the fish.
  7. Pour blended mixture all over fish and bake for about 20 mins or until fish is cooked.
  8. Serve with rice.
