Jollof Rice
- 3 cups of long grain parboiled rice
- 2 cups of water for cooking the rice
- 2 cups frozen mixed veggies
- 1 cup pomi strained tomatoes
- 2 stock cubes
- 1 tbsp dried pepper
- 2 tsp Ms. Dash
- ½ onion (chopped)
- ¼ cup oil
- 2 tsp curry
- 2 tsp thyme
- 1 tsp ground ginger
- 1 tsp ground garlic
- Wash the rice thoroughly
- Add all ingredients (except veggies) into a pot and stir until well combined.
- Set on a stove, and cook on medium heat for about 20 minutes.
- Check rice for softness/doneness.
- Add some more water if necessary.
- Add the frozen veggies.
- Stir and cook for additional 10 mins.
- Serve and Enjoy
