Plantain Yeast Bread

  • 3 ripe plantains
  • 1 heaping tbsp yeast
  • ¼ cup water
  • ¼ cup canola oil
  • 2 eggs
  • 11/4 cup dry oats
Instructions
  1. Blend the dry oats until it becomes a smooth powder
  2. Pour oats in bowl
  3. Peel the plantains, chop and put into a food processor
  4. Add the water, eggs, oil and water and blend until velvety smooth
  5. Pour plantain blend into the bowl of dry oats
  6. Add yeast and mix thoroughly.
  7. Spray a loaf pan with oil.
  8. Pour the plantain oat mix into the loaf pan and leave to rise for about 30 minutes or until it doubles in size.
  9. Bake in a 350 degree oven for about 45 minutes or until and inserted toothpick comes out clean.
  10. Cool and serve as you will regular bread.
