Plantain Yeast Bread
Total time
- 3 ripe plantains
- 1 heaping tbsp yeast
- ¼ cup water
- ¼ cup canola oil
- 2 eggs
- 11/4 cup dry oats
- Blend the dry oats until it becomes a smooth powder
- Pour oats in bowl
- Peel the plantains, chop and put into a food processor
- Add the water, eggs, oil and water and blend until velvety smooth
- Pour plantain blend into the bowl of dry oats
- Add yeast and mix thoroughly.
- Spray a loaf pan with oil.
- Pour the plantain oat mix into the loaf pan and leave to rise for about 30 minutes or until it doubles in size.
- Bake in a 350 degree oven for about 45 minutes or until and inserted toothpick comes out clean.
- Cool and serve as you will regular bread.
