Rice and Lentils
- 2 cups long grain parboiled rice
- 6 large roma tomatoes
- 3 large bell peppers
- 1 cup cooked lentils
- 2 stock cubes
- i tbsp salt
- 1 tsp curry
- 1 tsp thyme
- 1 tsp ms. dash
- 1 tsp garlic
- 1 tsp ginger
- ¼ cup oil
- ½ cup of water
- Wash the rice thoroughly until the water water runs clear.
- Put water rice in a non stick pot
- Blend the onions, tomatoes, and peppers with ¼ cup of water until smooth.
- Pour blend into the pot of rice.
- Ass all ingredients except the lentils
- Stir
- Cook on medium heat with the pot covered for about 20 mins.
- Check the rice for softness, If it is still hard, ass about ¼ cup water and cook for 5 more minutes.
- Add Lentils and stir.
- Cook for additional 5 - 7 minutes.
- Turn off heat and serve.
