Spinach + Smoked Fish Stew
- 1lb smoked dried cat fish
- 3 cups frozen chopped spinach
- 3 large red bell peppers
- 1 large onion
- 6 large roma tomatoes
- 3 thai peppers
- 2 stock cubes
- 1 tbsp salt
- 1 tbsp crayfish
- 1 tbsp ginger
- 2 pieces of garlic - smashed
- ½ cup oil
- ¼ cup water for blending
- 3 cups water for pre-boiling fish
- Boil the smoked fish with 3 cups of water for about 6 minutes, turn off heat, and then pour away the boiling water.
- Heat oil in a non stick stock pot for 3 mins.
- Blend the tomatoes, onions, and peppers with ¼ cup water until smooth.
- Pour the blended mixture into the pot with hot oil and stir.
- Add all the ingredients except spinach into the pot and cook for 20 minutes, while stirring continuously.
- Add the spinach, cook for 5 more minutes and serve.
