Vegetable Fried Rice
- 2 cups of cooked basmati rice
- 3 cups of thinly sliced cabbage
- 2 cups of diced carrots
- 1 cup of chopped brocolli
- 1 large red onion thinly sliced
- 1 cup of chopped fresh shrimps
- 1 habanero pepper (chopped)
- 1 tsp coriander
- 2 tsp curry
- 2 tsp thyme
- 1 tsp salt
- 1 tsp powdered garlic
- 1 tsp powdered ginger
- 1 stock cube
- 3 tbsp canola oil
- Heat the oil in a wide nonstick pan.
- Add the onions and pepper.
- Stir and cook for about 3 - 5 mins until the onions turn transluscent.
- Add the carrots and spices, stir and cook for 2 mins.
- Add the cabbage, broccoli and shrimps.
- Stir to combine and leave to cook for about 5 mins.
- Taste for salt and adjust as necessary
- Add the rice, and stir well to combine.
- cook for additional 2 mins. Leave to cool and enjoy!
