Curried Goat Again
Total time
- 6lbs of goat meat (chopped into bite sizes)
- 6 tbsp freshly blended ginger
- 3 cups of water
- 3 tbsp freshly crushed garlic
- 1 tbsp salt
- 2 stock cubes
- 3 tbsp curry
- 2 tbsp thyme
- 2 large red onions
- 2 scotch bonnet peppers
- 4 cups chopped celery
- 1 large red bell pepper (sliced in thin stripes)
- 2 tbsp of cornstarch
- 4 tbsp of water to dissolve the cornstarch
- Blend the onions, peppers, ginger and garlic into a paste.
- Add the paste into a pot with the meat, spices and water.
- Cook on medium heat for about 60 minutes or until meat is very soft.
- Add about 1 cup of water if necessary.
- Add the chopped celery and stir to combine.
- Cook for additional 5 mins.
- Dissolve the cornstarch in 4 tbsp water to form a paste.
- Pour cornstarch paste into the curry and stir to combine.
- Taste for salt/pepper and adjust as necessary.
- If the curry is too thick, add 1 tbsp of cornstarch to 2 tbsp of water. Mix and add to curry.
- Add the red bell pepper to finish and turn off heat.
- Leave to cool,
- Enjoy.
