Plantain Fritters
- 2 medium sized overripe plantains
- 1.5 cup all purpose flour (sifted)
- 2 large eggs
- ½ tsp salt
- ½ tsp hot red pepper
- ½ tsp nutmeg
- 1 tsp baking powder
- 2 tsp freshly crushed ginger
- Oil for frying
- Heat frying oil in a deep frying pan.
- Blend the plantain, and eggs until smooth.
- Pour the blend into a bowl.
- Add all the other ingredients into a bowl and mix until smooth.
- Test the temperature of the oil by adding a scoop of fritter batter to the oil. Fritter should bob to the surface when oil is ready.
- Using a small ice-cream scoop or table spoon, scoop fritter batter into the frying oil.
- Flip frying fritters after about 3 minutes to brown all sides.
- Fritter is ready when both sides are golden brown.
