Ingredients
  • 2 medium sized overripe plantains
  • 1.5 cup all purpose flour (sifted)
  • 2 large eggs
  • ½ tsp salt
  • ½ tsp hot red pepper
  • ½ tsp nutmeg
  • 1 tsp baking powder
  • 2 tsp freshly crushed ginger
  • Oil for frying
Instructions
  1. Heat frying oil in a deep frying pan.
  2. Blend the plantain, and eggs until smooth.
  3. Pour the blend into a bowl.
  4. Add all the other ingredients into a bowl and mix until smooth.
  5. Test the temperature of the oil by adding a scoop of fritter batter to the oil. Fritter should bob to the surface when oil is ready.
  6. Using a small ice-cream scoop or table spoon, scoop fritter batter into the frying oil.
  7. Flip frying fritters after about 3 minutes to brown all sides.
  8. Fritter is ready when both sides are golden brown.
