Ingredients
  • 1 medium red onion (chopped)
  • 1 cup left over roast turkey
  • 5 cups baby spinach
  • 4 large roma tomatoes (chopped)
  • 3 tbsp canola oil
  • 1 tsp curry
  • 1 tsp thyme
  • 1 tsp salt
  • 1 tsp black pepper
Instructions
  1. Heat the oil in a pot.
  2. Add the onions into the oil and cook for about 5 mins while stirring continuously.
  3. Add the tomatoes, stir and cook for about 10 minutes while stirring.
  4. Add salt, pepper, curry, and thyme, stir, and cook for 5 minutes.
  5. Add the spinach.
  6. Stir to combine.
  7. Cook for 1 minute or until spinach wilts.
  8. Turn off heat and serve.
