I can't believe it's not Fried Rice
- One medium cauliflower, grated and drained in a cheesecloth. (will yield about 4 cups of "rice").
- 1 large green bell pepper (chopped)
- 3 cups of mixed veggies
- 1 large onion (sliced thinly)
- 1 cup of shrimps (cleaned and deveined)
- 2 tsp curry
- 2 tsp thyme
- 2 tsp salt
- 1 stock cube
- 1 tsp garlic
- 1 tsp ginger
- 2 tsp salt
- ¼ cup oil
- Heat a pan for 2 mins
- Pour the oil into the hot pan.
- Add the onions and peppers and cook for about 5 mins.
- Stir, and add the mixed veggies.
- Cook for about 7 more minutes while stirring continuously.
- Add the spices and continue to stir.
- Add the cauliflower, stir and cook for about 7 minutes.
- Add the shrimps.
- Continue cooking while stirring continuously, for about 5 min or until shrimps are pink and plump.
- Serve with any protein of choice.
