Almond Banana Bread

This bread is so simple and nutty. Everyone in our household enjoyed it.

Almond Banana Bread

Ingredients
  • 3 overripe bananas
  • ½ cup vegetable oil
  • 2 cups all-purpose flour
  • 1 cup toasted almonds
  • 1 teaspoon baking soda
  • ½ teaspoon freshly grated nutmeg
  • ½ teaspoon all spice
  • 2 large eggs, lightly beaten
  • 1 cup yogurt
  • 1 cup dark brown sugar
  • 1 teaspoon pure vanilla extract
Instructions
  1. Preheat the oven to 350 degrees F. Oil one 9-by-5-inch loaf pan.
  2. Add all the ingredients except the flour and almonds into a food processor and blend until smooth.
  3. Pour the blended mixture into a bowl.
  4. Add the flour and mix until well combined.
  5. Pour mixture into the loaf pan.
  6. Top with toasted almonds.
  7. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour.
  8. Cool and enjoy.

Banana Rice Bread

Couple years ago, while in undergrad, I often visited my Aunty in Baltimore during the holidays. Whenever i was going back to school (i lived in the campus dorms), my Aunt will send me off with this bread, hot and fresh off the oven.

Prior to my first encounter with this bread, i had never had a sweet cake/bread made without wheat flour. The texture felt different, but it tasted great. It is so easy to make, blend, mix, and pop in the oven. I never got tired of this bread. Loved it then, still love it now.
