Jollof Rice

Jollof rice in itself is great, but these veggies give it a little something extra. Like what louboutin peep toe pumps do to sexy manicured feet.

Like we discussed before, Jollof rice and sunday go hand in hand. Like wings on game day…. hahahha today is a day for Similes.

We had this rice for lunch, with some tandoori chicken.

Ingredients
  • 3 cups of long grain parboiled rice
  • 2 cups of water for cooking the rice
  • 2 cups frozen mixed veggies
  • 1 cup pomi strained tomatoes
  • 2 stock cubes
  • 1 tbsp dried pepper
  • 2 tsp Ms. Dash
  • ½ onion (chopped)
  • ¼ cup oil
  • 2 tsp curry
  • 2 tsp thyme
  • 1 tsp ground ginger
  • 1 tsp ground garlic
Instructions
  1. Wash the rice thoroughly
  2. Add all ingredients (except veggies) into a pot and stir until well combined.
  3. Set on a stove, and cook on medium heat for about 20 minutes.
  4. Check rice for softness/doneness.
  5. Add some more water if necessary.
  6. Add the frozen veggies.
  7. Stir and cook for additional 10 mins.
  8. Serve and Enjoy
