Spinach + Smoked Fish Stew

Ingredients
  • 1lb smoked dried cat fish
  • 3 cups frozen chopped spinach
  • 3 large red bell peppers
  • 1 large onion
  • 6 large roma tomatoes
  • 3 thai peppers
  • 2 stock cubes
  • 1 tbsp salt
  • 1 tbsp crayfish
  • 1 tbsp ginger
  • 2 pieces of garlic - smashed
  • ½ cup oil
  • ¼ cup water for blending
  • 3 cups water for pre-boiling fish
Instructions
  1. Boil the smoked fish with 3 cups of water for about 6 minutes, turn off heat, and then pour away the boiling water.
  2. Heat oil in a non stick stock pot for 3 mins.
  3. Blend the tomatoes, onions, and peppers with ¼ cup water until smooth.
  4. Pour the blended mixture into the pot with hot oil and stir.
  5. Add all the ingredients except spinach into the pot and cook for 20 minutes, while stirring continuously.
  6. Add the spinach, cook for 5 more minutes and serve.
