Cat Fish + Plantain soup

This quickie is perfect for weeknights. I typically set it on the stove, get my 30mins workout in and dinner is ready! 🙂

Full serving of protein and carbs. Throw in Arugula salad or Coleslaw to get your veggies in for the day.

Cat Fish + Plantain Soup

Ingredients
  • 1 medium catfish cleaned and cut into steaks
  • 1 plantain (chopped into cubes)
  • 2 tbsp peppersoup mix
  • 6 cups of water
  • 1 large onion (blended)
  • 1 tbsp crayfish
  • 1 tsp cameroon pepper
  • 2 stock cubes
Instructions
  1. Clean the fish thoroughly to remove all the slime ( I use salt to clean and use a knife to scrape off slime).
  2. Add all ingredients except the fish and cook on medium heat for about 20 minutes.
  3. Add the fish and cook for about 10 more minutes or until the fish is firm and flaky.
  4. Serve.
