Shrimp Skewers + Green Shrimp Rice

After purchasing a large $5.00 pack of fresh chives, i realized that it was a mistake.  Too much chives. What will one person do with that much? Make green rice!

This rice is herby and chivy. We all loved it.

Green rice Ingredients:

  1. 2 cups cooked parboiled long grain rice (make sure it is hot)
  2. 1 cup chopped fresh chives
  3. 1 cup mixed veggies (carrot, corn, green peas)
  4. 1/2 cup shelled deveined raw shrimps
  5. 1 green bell pepper (chopped)
  6. 2 tsp ms. dash
  7. 1 tsp curry
  8. 1 tsp thyme
  9. 3 tbsp olive oil

Method:

  1. Add all ingredients except rice into the pot and cook for about 7 mins.
  2. Add the rice into the same pot while stirring to combine all ingredients.
  3. Cook for additional 3-5 minutes.

Shrimp Skewers Ingredients

  1. 15 Large shelled deveined Shrimps
  2. 1 tsp “Slap Ya Mama” seasoning
  3. 1 tsp dill weed
  4. 3 tbsp Oil

Method

  1. Add all ingredients into a bowl and mix well.
  2. Arrange 5 shrimps each on a skewer.
  3. Heat a griddle/grill until fiery hot.
  4. Place each skewer on the grill and cook until both sides are cooked .(pink/white) be careful not to overcook.
  5. Enjoy with Green rice, or with a salad.
