Butterflied Harissa Chicken

< 7 Ingredients, one delicious protein packed entree.  Harissa is a popular Tunisian seasoning. It is readily available in spice shops, and on amazon.  Butterflied chicken cooks faster than whole chicken and results in that crispy exterior, and tender moist interior.

Move over KFC and other FCs, Let this Harissa Chicken be at the center of your dinner table tonight.

Ingredients

  1. A whole organic chicken
  2. 1 tbsp salt
  3. 3 tbsp Harissa
  4. 1 tbsp Dill weed
  5. 1 tbsp roasted garlic
  6. 1/3 cup oil

Method

  1. Butterfly the chicken.
  2. Heat the oven to about 450 degrees
  3. Remove the giblets and set aside (You can use this to make stock)
  4. Mix the spices and oil together
  5. Rub the oil mix all over the chicken
  6. Rub oil mix under the skin, under the wings, under the legs and other hidden crevices
  7. Place chicken on a roasting rack and place in oven for about 30 – 45min minutes.
  8. Chicken is cooked when it is no longer pink inside.
  9. Leave to rest/cool
