Curry Lentil Stew

This lentil stew is simply amazeballs! So simple, anyone could make it. Let me not ramble too much and get to the lentils!

Ingredients

  • 5 large red bell peppers
  • 1 scotch bonnet pepper  (optional)
  • 1 large red onion
  • 11/2 lbs lentils
  • 6 cups of water
  • 1 tbsp curry
  • 1 tbsp herbs d’ provence
  • 2 tsp allspice
  • 2 tsp ginger
  • 1 tsp cinnamon
  • 2 tsp ms. dash
  • 1 tbsp salt
  • 1/2 cup canola oil

Method

  • Soak the lentils in a pot of water for about 3 hours or overnight for best results.
  • Blend the peppers and onion with one cup water.
  • Pour out lentil soak water.
  • Pour blended mixture into lentil pot.
  • Add all other ingredients and cook on medium heat for about one hour or until the lentils are soft.
  • ***Add more water if lentils get too dry while cooking***
  • Lentils are ready when they are soft
  • Serve with plantain, rice, yam, bread or sweet potatoes.

  2. Full of fiber
  3. Flatulence-less

I eat lentils for breakfast, lunch, snack and dinner. It goes down well in my digestive system and does not cause the flatulence and bloating i get from beans.
