Chicken Zucchini Skewers

Day 3 of the Harcombe diet. I cheated!! i had a spoon of ice-cream, and few pieces of ChinChin. This struggle is real man!

I had to rise, dust off,  and settle with these amazing colorful skewers for dinner.

Ingredients

  • 3 large Chicken Breasts
  • 3 tbsp Sesame Oil
  • 3 tbsp Soy Sauce
  • 4 tbsp Rice Vinegar
  • 1 tbsp Black Pepper
  • 1 tbsp Ground Ginger
  • Oiled (use olive oil) and Salted Zucchini, Sweet Onion, Assorted bell peppers

Method

  • Cut up the chicken into bite sized pieces and put in a bowl
  • Add the oil, soy sauce, rice vinegar, black pepper and ginger to the chicken bowl
  • Leave to marinate for about 10 minutes
  • Then begin to arrange chicken and chopped veggies in presoaked bamboo skewers
  • Arrange skewers on baking sheet

  • Pour excess marinade on top of the skewered chicken.
  • Roast in the oven for about 25mins on low heat.
  • Bring out and serve with watercress.

These skewers are the perfect party starter/ appetizer, and they are great as a meal too.
