Suya Flat Bread Sandwich

Today my dear BIL – Prof, and his heart throb madam HaviF visited. It is always such fun to hang out with them. Thank you much guys.

I wanted to serve something quick that wouldn’t require much work. Thankfully i had some Naan on hand, some fresh herbs, beef , and a suya rub from Nigeria. These ingredients screamed sandwich to me… LOL

For the suya strips, rub a generous amount of suya seasoning, oil, ginger and salt all over thin beef stripes. Add a sprinkle of apple cider and leave to marinate for 30 minutes. Cook beef stripes on a hot grill until meat is well done.

Spread some salted butter or oil over the naan, place on a baking sheet and bake in a 400 degree oven for 2-5 mins or until the naan is toasted to your taste.

To Assemble the following are needed:

4 suya stripes

2 toasted naan

2 fresh mango stripes

4 stripes of roast red bell pepper

1/2 cup of chopped parsley

2 tbsp chopped scallions

2 tbsp roast sweet onions

Arrange all the ingredients on the naan, drizzle the cooked suya drippings over the naan, and enjoy!
