Scotch Eggs

Happy Friday friends!

Scotch Eggs have always been a family favorite. Back in the day in Lagos Nigeria, Scotch Eggs was one our favorite things to get from Mr. Biggs. Ah… that pink beef sausage meat, encased in the crispy outer shell, and then the eggs in the middle that sometimes had a touch of pink from the sausage meat.

Mr. Biggs scotch eggs had a distinct flavor. I can almost still taste it.

Making this brought back lovely memories of childhood days. Eating it was even better because it tasted great!

Scotch Eggs

Ingredients
  • ½ lb of turkey sausage meat
  • 4 hard boiled eggs (shelled)
  • ¼ cup flour
  • ½ cup panko bread crumbs
  • 2 tsp freshly chopped cilantro
  • 1 raw egg white
  • 1 tsp paprika
  • 1 tsp black pepper
  • ½ tsp garlic
  • Oil for frying
Instructions
  1. Heat the oil for frying.
  2. Mix all the herbs and spices together and add to the sausage meat.
  3. Mix it all in until well combined.
  4. Dust all four eggs with some flour
  5. Divide the sausage meat into 4 portions.
  6. Using your palms, form a patty with a portion of the sausage meat.
  7. Place a floured egg in the middle of the sausage meat patty.
  8. Use the patty to completely cover the egg.
  9. Cover all other eggs in the same way.
  10. Lightly dust the covered eggs in flour.
  11. Then roll the eggs in the egg white.
  12. Then immediately roll the eggs in panko bread crumbs until completely covered.
  13. Fry breaded eggs for about 3 mins on it side until both sides are golden brown.
  14. Serve Hot.
