Stuffed Plantain Balls.

With leftover boiled plantain in the fridge, corned beef in the pantry,  and inspiration from Lohi, we made these lovely plantain bites. They were super tasty.

You can have them for breakfast, lunch or dinner.

Stuffed Plantain Balls.

Ingredients
  • 7-10 2inch pieces of leftover boiled ripe plantain
  • Exeter corned beed
  • 1 tbsp water
  • A pinch of salt
  • A pinch of black pepper
  • Oil for frying
Instructions
  1. Heat up the frying oil
  2. Peel the plantain and warm in the microwave for about 2 mins or until warm enough to mash easily.
  3. Mash the plantain with a fork, add water, salt and pepper and combine well.
  4. Take a portion of the mash, and form a patty in your palm.
  5. Stuff the mash with a bit of corned beef and form an oval/ball to encase the beef.
  6. Fry the balls in the heated frying oil until they turn golden on both sides.
  7. Take them out of the oil, and serve hot.
  8. Enjoy.
