Curried Goat Again

Madam ChiO turned one year older today.

We are so grateful for life, good health, love, grace, and mercy amongst other things.

After church service, we gathered in the kitchen, Prof said a heartfelt prayer, and we descended upon our celebration lunch consisting of Beef HandPies, Sesame + Crab Rolls, Curried Goat, Buttered Rice, Fried Plantains, and Roast Vegetables (fennel + carrot + heirloom tomatoes).

Thereafter we had Havilah’s spiced chocolate cake. I have not smelled a cake so amazing in recent times.  You open the pan, and the smell just takes you to places difficult to describe. Then a bite… just one bite sends you to the gates of foodie heaven. You chew, try to savor, and then the magic happens…the subtle notes of spice, marry the intensely rich moist chocolate cake and that creamy fluffy frosting swirls around your tongue, the caramel teases you… Ah! it is ecstasy really. Thank You Havilah!

The goat, the star of table was amazing. It was a modified (thicker + richer) version of our original curry and it tasted fabulous.  It was easy to whip up too. We are are all about easy and delicious here at Oya Come Chop.

Curried Goat Again

Ingredients
  • 6lbs of goat meat (chopped into bite sizes)
  • 6 tbsp freshly blended ginger
  • 3 cups of water
  • 3 tbsp freshly crushed garlic
  • 1 tbsp salt
  • 2 stock cubes
  • 3 tbsp curry
  • 2 tbsp thyme
  • 2 large red onions
  • 2 scotch bonnet peppers
  • 4 cups chopped celery
  • 1 large red bell pepper (sliced in thin stripes)
  • 2 tbsp of cornstarch
  • 4 tbsp of water to dissolve the cornstarch
Instructions
  1. Blend the onions, peppers, ginger and garlic into a paste.
  2. Add the paste into a pot with the meat, spices and water.
  3. Cook on medium heat for about 60 minutes or until meat is very soft.
  4. Add about 1 cup of water if necessary.
  5. Add the chopped celery and stir to combine.
  6. Cook for additional 5 mins.
  7. Dissolve the cornstarch in 4 tbsp water to form a paste.
  8. Pour cornstarch paste into the curry and stir to combine.
  9. Taste for salt/pepper and adjust as necessary.
  10. If the curry is too thick, add 1 tbsp of cornstarch to 2 tbsp of water. Mix and add to curry.
  11. Add the red bell pepper to finish and turn off heat.
  12. Leave to cool,
  13. Enjoy.
