Turk & Chard Balls

These balls are Ahhhhhmazing!!! Swiss Chard is definitely one our our most loved greens. It is crunchy, earthy, green, delicious, and curly in quite a sexy way. There is nothing to hate about this vegetable.

That being said, one of our kitchen tasters would rather skip his greens,  so we try to think of ways to incorporate greens into meals in a way that he would not notice.

These balls did just that. We loved the green color and the taste. It is something that could grace the table at a green themed party/event, like “Nigerian independence day” or “St Patrick’s” day.

The sauce was lovely as well with 5 simple ingredients, it did a fine job coating the balls and keeping them moist.  The sauce was made with pureed tomatoes, fresh red bell peppers and onions, water, olive oil, and spices (curry thyme, and salt).

Ingredients
  • 2 lbs ground turkey
  • 2 large red onions (pureed in a processor)
  • 1 bunch swiss chard (pureed in a processor)
  • 2 tbsp slap ya mama
  • 2 tbsp black pepper
  • 4 tbsp olive oil
  • 2 tbsp curry
  • 2 tbsp thyme
  • 1 tbsp basil
  • 1 tbsp rosemary
  • 1 tbsp paprika
  • 2 egg whites
Instructions
  1. Preheat the oven to 350 degrees F
  2. Heat the oil in a pan on the stove top.
  3. Add the pureed onions and cook for 7 minutes while stirring continuously.
  4. After 7 minutes, onions should have turned brownish color.
  5. Remove from heat and leave to cool for about 15 minutes.
  6. Now add the browned onions and all other ingredients into a bowl and combine thoroughly.
  7. Using an ice-cream scoop, scoop balls of the mixture and place on a lined baking sheet.
  8. Cook in the oven for about 30 minutes or until the balls are cooked through.

After the balls were cooked, they were allowed to cool for about 30 minutes before being dipped in the sizzling sauce. The balls were then finished off with olive oil and some herbs.
