5min Zucchini Noodles

Yay! We made it to the last day of 2015! How gracious is our God!!!

2015 was our year of YES. Everything from venturing to paths unknown, to being open to new friends and relationships, We said YES.

We are wrapping up 2015 with indulgent goodness. Lamb is fatty, and is a great way to spoil yourself on New year’s eve :). Squash noodles are light and incredibly delicious. A quick toss in good olive oil, and some Falk Salt is all you need with freshly spiraled zucchini. You may also heat the noodles in the microwave for 1 minute if you prefer your noodles hot.

The seasoning for the lamb has to be deliciously precise because the drippings make the sauce for the squash/zucchini noodles. For the lamb, use 1 tbsp canola oil, 1 tsp salt, 1 tsp thyme, 1 tsp black pepper, 1 tsp garlic. Make a rub using the spices/oil and rub it all over a fresh lamb chop. Cook on a hot griddle or grill.

The noodles are so easy to make using the Faberware Spiraletti. It is so much fun too. I can see children making beautiful dinner time memories turning the handle.

The Spiraletti is one amazing kitchen too. It is unpretentiously straightforward,  it comes with 3 different blades, and we especially love the suction feet because it holds things in place during processing. This is a must have for folks on a low carb diet. It will keep dinners interesting.

Zucchini Noodles

Ingredients
  • 2 medium sized yellow zucchini
  • 2 tbsp good olive oil
  • 1 tsp wild garlic Falk Salt
Instructions
  1. Spiralize the zucchini using Faberware Spiraletti.
  2. Place spiraled zucchini (noodles) in a clean bowl.
  3. Add the oil and alt into the bowl and toss to combine.
  4. Serve cold, or heat for one minute in a microwave if you prefer hot noodles.
  5. Enjoy!
