  • 1 tbsp freshly crushed garlic (for each pound of meat)
  • 1 tsp salt (for each pound of meat)
  • Rind from one orange (for each pound of meat)
  • Juice from one orange (for each pound of meat)
  • 2 tbsp oil (for each pound of meat)
Instructions
  1. Add all the ingredients (except the lamb) into a bowl.
  2. Mix the bowl ingredients to create a rub.
  3. Line a baking sheet with foil.
  4. Rub the "rub" generously all over the rack of ribs.
  5. Place the seasoned rack in a 450 degree oven for about 15 minutes.
  6. Then bring out the ribs and cover with foil then place back into the oven.
  7. Reduce the oven to about 350 degrees and cook until the thickest part of the chops reaches an internal temperature of 160 degrees (i like my meat well done.)
  8. Bring out from the oven and leave to rest for at least 15mins.
  9. Cut the meat according to the rib pattern.
  10. Arrange in a platter. Pour the juices over the lamb in the platter.
  11. Finish with fresh orange rind and a squeeze of orange juice.
  12. Enjoy!
  13. Serve and enjoy.

Oya Come Chop. 🙂
