I can’t believe it’s not Fried Rice

Yes indeed, today we enjoyed cauliflower made exactly like fried rice except that cauliflower was substituted for rice.

The largest 4 cup bowl is an essential tool for my catering. This past weekend, I made 120 pastries for Dr O’s birthday, and this set helped a great deal with following precise pastry measurements.

I can't believe it's not Fried Rice

Ingredients
  • One medium cauliflower, grated and drained in a cheesecloth. (will yield about 4 cups of "rice").
  • 1 large green bell pepper (chopped)
  • 3 cups of mixed veggies
  • 1 large onion (sliced thinly)
  • 1 cup of shrimps (cleaned and deveined)
  • 2 tsp curry
  • 2 tsp thyme
  • 2 tsp salt
  • 1 stock cube
  • 1 tsp garlic
  • 1 tsp ginger
  • 2 tsp salt
  • ¼ cup oil
Instructions
  1. Heat a pan for 2 mins
  2. Pour the oil into the hot pan.
  3. Add the onions and peppers and cook for about 5 mins.
  4. Stir, and add the mixed veggies.
  5. Cook for about 7 more minutes while stirring continuously.
  6. Add the spices and continue to stir.
  7. Add the cauliflower, stir and cook for about 7 minutes.
  8. Add the shrimps.
  9. Continue cooking while stirring continuously, for about 5 min or until shrimps are pink and plump.
  10. Serve with any protein of choice.
