Banana Ginger Yeast Bread

Today i had an intense craving for Bread. It must have had something to do with the clouds and rains in Baltimore. It had to be something flour-less because of this new Wheat free diet i have embarked upon.

With some bananas, oatmeal, and yeast, this flour-less, gluten free beauty was such a breeze and ease to whip up.

While baking this gorgeous baby, the house was fragrant with the warm scent of ginger, nutmeg and bananas.

After it baked to perfection, I sat down comfortably to enjoy :). The first bite…hmm…. the crunch from the Turbinado sugar was so delightful… then the sweetness of the sugar married the spicy yummy bread… I took it all in with my eyes closed, between sips of green tea.

Rich, lovely, healthy flavors. Similar to this plantain bread,Β but sweeter. This banana rice bread is gluten free awesomeness too, try it if you want something without yeast.

Ingredients
  • 3 large Bananas
  • 3 cups of plain Oatmeal
  • 1 cup of Almond milk
  • 2 eggs
  • ½ cup of Canola oil
  • ¼ cup Turbinado sugar
  • 3 tbsp freshly grated ginger.
  • 1 tsp Nutmeg
  • 2 tsp Yeast
  • 2 tsp Vanilla
Instructions
  1. Add all ingredients (except the sugar) into a food processor and blend for about 5 minutes or until well combined.
  2. Spray a loaf pan with PAM or oil well.
  3. Transfer oat batter into the loaf pan.
  4. Cover with a damp cloth and place in a warm spot.
  5. Leave to rise for about 45 minutes or until batter almost doubles in size.
  6. Heat the Oven
  7. Sprinkle sugar all over the top of the bread.
  8. Place the bread batter in a 360 degree oven and allow it to bake for about 40 minutes or until an inserted knife comes out dry.

  1. hmmmm… this bread is a lovely idea! i noticed no eggs? i guess cos its not cake πŸ™‚ i’m gonna have to try mine without Turbinado sugar cos i want this asap and i’m sure i’ll need to order the sugar online… can i use honey? and i noticed that regular bananas can be used? cos you didn’t specify they have to be ripened like the banana rice bread… hehehe.. sorry for my plenty questions πŸ˜€ teens

    1. Thanks for pointing that out 9LT. This recipe uses 2 Eggs to bind it all together. I mistakenly missed that one. No you need Turbinado sugar for the crunch on top. Note that sugar was not used to make the bread at all. it was sprinkled on top only. I used regular bananas, but overripe bananas will be sweeter and better. with overripe bananas though, i will reduce the abount of milk. Maybe 1/2 cup instead of 1 cup.
