Grilled Stone Fruit Salad

This Salad is citrusy, delicious, and so easy! Perfect for weeknight dinner and easy to whip up for impromptu guests.

Let us start with the sauce first:

Blend 1 tbsp olive oil, freshly squeezed juice from 1/2 navel orange, 7 sprigs of fresh rosemary, 7 fresh Taiwan Basil leaves.

Then the salad:

Grill the Peach on each side until beautiful grill marks are visible. It should take about 5 minutes.

Grilled Stone Fruit Salad

Ingredients
  • 1 medium cucumber (washed and chopped into cubes)
  • 2 ripe peaches
  • 10 cherry tomatoes
  • PAM
Instructions
  1. Heat a grill pan on the stove.
  2. Slice each peach in half and remove the stone.
  3. Spray the heated pan with PAM.
  4. Place the peach in the heated grill.
  5. Grill peach on each side until grill marks are visible.
  6. Remove peach from grill and leave to cool
  7. When completely cooled, chop the peach in bite sized cubes.
  8. Slice each cherry tomato in half.
  9. Mix the cucumber, tomatoes and grilled peaches together.

Mix the salad and the sauce together and leave them to marry for about one hour in the refrigerator. Trust me. This marriage is sweet and fruitful.
